The first time I made pandeyuca for my children, they decided to call them cheese fingers. I made them long and cheesy. I did not go into battle for a name, particular with young kids. The obvious is what works for them and the logical name was of course CHEESE FINGERS. At that time, I have not made for them the one that bears the name of ¨cheese fingers¨ or deditos de queso. Just as good as pandeyuca but are fried rather than baked.
So what is Pandeyuca? Before I tell you, I have to say first, they are the yummiest snack you can have. They are easy to make and a crowd pleaser. Children adore them and likewise the grown ups.

I watched my grandmother make pandeyuca about the same age my kids watched me making them. It is a tradition as a kid, to watch, wait and ask many questions!!! How much longer? After every 3 minutes or so of waiting, and watching

Now my kids are big kids now. And I am currently here and there not knowing where but it does not matter. What matters is that with me I have all the things that my grandmother taught me, the love of my children, mother, husband, family and friends. However, my love for them is what makes my life full and exciting, particular when I cook for them. They are the best audience I can hope for!
Now you can never go wrong with this recipe. If you add less cheese, the pandeyuca are fluffier and harder. If you are a cheese lover like myself, then the pandeyuca swells in the oven but them it might go flat. Not matter what their final look might be, the taste is what matters.

Recipe:
2 lbs grated white cheese, (mozzarella) for those of us that lives abroad
1 lbs manioc flour (yuca flour)( you can purchase in latin shops)
2 eggs4 tablespoons butter ( if you use salted butter then do not add salt to the batter)
salt to taste
Preheat oven 200 ( 375 USA) mix all ingredients until soft. If too hard add a bit of milk. Mix well and let sit for a bit. Place in a greased baking sheet and bake for 20 min.Now since ovens are different, etc.. not precise, when I use a new oven, I start checking them after 15 min.Enjoy them and let me know how you like them!!!
